How do you celebrate the Day of the Battle of Puebla? Although not widely celebrated in Mexico, Cinco de Mayo has become a popular holiday in the United States thanks in part to beer and alcohol companies. What I do love about Cinco de Mayo is that people everywhere are enjoying delicious Mexican flavors. Much of the dishes served are typical Mexican-American creations, dishes that have been created here in the U.S, like nachos and fajitas. We wanted to share recipes that celebrated more of the traditional Mexican cuisine, with our delicious Guacamole, Watermelon Agua Fresca, Gorditas with Rajas y Queso, Cheesy Calabacitas, and the popular Chile Verde with Pork.

Readers — Click on the photo below to find any of these recipes. Buen Provecho.

I like heat and so this recipe has one dried Scorpion pepper added to the mix. Scorpion peppers are one of the hottest chiles in the world, with a mean heat of more than 1.2 million Scoville heat units (SHUs).

Sure, there are the big things like taking care of kids or parents, unexpected car and home repairs, dealing with awful work situations, but sometimes the littlest things feel the most difficult. These days, one of my biggest dilemmas is finding what to feed myself in the mornings that is convenient, nourishing, and so tasty I’ll be psyched to eat it a few days a week. This...
